Sunflower Seeds Egusi Soup is a great alternative to the much loved Nigerian Egusi Soup.

Ingredients: - 2 cups (290g) sunflower seeds - 4 big cuts of stockfish - 2 tablespoons ground crayfish - 1 teaspoon cayenne pepper (or to your taste) - 1 habanero pepper (or to your taste) - ¼ cup palm oil - Spinach or other leafy vegetable (to your liking) - Salt to taste Feel free to add dry fish, beef, goat meat and other meat and fish we use for Nigerian soups for swallows.
